So, I had made some flat iron steaks on the barbeque last night. I had leftovers, so I thought this would be great with eggs. This recipe serves 2.
3 eggs beaten w/ a splash of milk
a couple of snips of green onions/scallions
2-3 oz. leftover cooked flat iron steaks, cut into bites
1 slice American cheese
1 slice Swiss cheese (or whatever cheeses YOU like)
Preheat your GT Xpress. Spray wells (top and bottom) with Pam/cooking spray. Divide egg mixture between the 2 wells. Do NOT overfill. Add steak & onions. Cook 2-3 min. until bottom sets. Flip as best you can. It will break apart, but that's okay. This is a scramble, not an omelete. Cook another 2-3 min. (turning once or twice). Top with cheese, but don't close the lid! When cheese is melted to your liking, serve.
I served mine in the photo with a dark wheat bread with butter. I also served a few drops of hot sauce on my scramble. Yum!

Everything you make looks great.
Enjoying your blog,

Hi Maryann - wow, thanks for your website. I just ordered the GT Xpress today so am doing a bit of research in preparation. One question...when you say to FLIP some things - I thought one of the main features of this machine was that you don't have to flip food since it cooks on top and bottom?? Could you explain further? Thanks, Ruby
Hi Ruby,
You would not need to FLIP things if they actually touch the top side of the well. In this particular recipe (and some of my others) I want to get the scrambled effect. I personally like the scrambles better than the omelettes. But, if you wanted to, you could do this as an omelette and copy the cooking instructions off one of my omelettes on my blog.
And to Susie...thanks again!
Enjoy guys...
Maryann
